Christmas leftover Sandwich

OMG -I possibly had the best roll ever. Ok, I exaggerate, but it was a pretty damn good roll! I would like to give credit where credit is due, but I can't remember the website that first inspired me to make a roll out of the leftover turkey. I know the article briefly mentioned Monica's "moist-maker" but I didn't even bother going there.

Right. So here's what I did:

Ingredients:

  • leftover turkey
  • greek no fat yoghurt
  • 1 stalk of celery
  • cranberry sauce
  • a focaccia roll (or whatever bread roll you like)
  • leftover stuffing (see the recipe for the stuffing I had too!)
Method:

  • Combine the leftover turkey, celery and no fat yoghurt in a bowl.
  • heat up the stuffing in the microwave
  • spread the cranberry sauce on one side of the roll
  • assemble the 'wich.
AWESOME. I did also toast the focacia roll first because mine was left overnight, it was crunchy, but still good.

Satisfied. If I do say so myself. :)
